Classic Tuna Casserole

What sets this version apart? Sautéed veggies and a crispy chip topping. Try this easy-to-follow recipe for a deliciously comforting meal.

Ingredients:

  • 2 cans (12 oz. each) of tuna in water, drained
  • 8 oz. of wide egg noodles
  • 2 tablespoons of olive oil
  • 1 small onion, finely chopped
  • 1 cup of frozen peas
  • 1 cup of sliced mushrooms
  • 1 cup of shredded cheddar cheese
  • 1 cup of sour cream
  • 1 cup of mayonnaise
  • 1/2 cup of grated Parmesan cheese
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of dried thyme
  • Salt and pepper to taste.
  • 1 cup of crushed potato chips

 

Instructions:

  1. Preheat your oven to 350°F (175°C). Coat a 9×13-inch baking dish with cooking spray and set it aside.
  2. Prepare the egg noodles following the instructions on the package until they reach al dente perfection. Afterward, drain them and keep them aside.
  3. In a generously sized skillet, warm the olive oil over medium heat. Introduce the finely chopped onion and cook it until it takes on a translucent appearance, which should take roughly 3-4 minutes.
  4. Next, incorporate the frozen peas and sliced mushrooms into the skillet. Continue cooking for an additional 3-4 minutes until the mushrooms turn tender.
  5. In a separate mixing bowl, blend the drained tuna, cheddar cheese, sour cream, mayonnaise, grated Parmesan cheese, garlic powder, dried thyme, salt, and pepper. Ensure that all the ingredients are well combined.
  6. Add the cooked egg noodles into the tuna mixture, gently folding them in. Then, fold in the sautéed vegetables.
  7. Transfer this mix of tuna and noodles to the greased baking dish. Spread the crushed potato chips evenly over the top layer.
  8. Place the baking dish into the preheated oven and let it bake for 20-25 minutes. You’ll know it’s ready when the casserole becomes hot and bubbly, and the potato chip topping takes on a golden-brown hue.
  9. Once the timer rings, take the casserole out of the oven and allow it to cool for a few minutes before serving.
