Cottage Shepherd’s Pie

This recipe is perfect for both busy weeknight dinners and relaxed family meals. With savory ground beef, a medley of veggies, and creamy mashed potatoes, it’s a crowd-pleaser that won’t disappoint.

Ingredients:

  • 1 pound of ground beef
  • 1 cup of finely chopped onions
  • 2 cups of thawed frozen corn
  • 2 cups of thawed frozen peas
  • 2 tablespoons of ketchup
  • 1 tablespoon of Worcestershire sauce
  • 2 teaspoons of minced garlic
  • 1 tablespoon of cornstarch
  • 1 teaspoon of beef bouillon granules
  • 1/2 cup of cold water
  • 1/2 cup of sour cream
  • 3-1/2 cups of mashed potatoes
  • 3/4 cup of shredded cheddar cheese

 

 

Instructions:

  1. Begin by browning the ground beef and finely chopped onions in a skillet over medium heat. Once the beef is no longer pink, drain any excess grease.
  2. Add the thawed corn, peas, ketchup, Worcestershire sauce, and minced garlic to the skillet. Reduce the heat to medium-low, cover, and let it simmer for approximately 5 minutes.
  3. In a separate bowl, combine the cold water, cornstarch, and beef bouillon granules. Mix until well blended, and then add this mixture to the beef and vegetable mixture. Allow it to come to a gentle boil and cook until the sauce thickens.
  4. Next, introduce the sour cream into the mixture and heat it through. This will add creaminess and flavor to the filling.
  5. Preheat your oven’s broiler function.
  6. Transfer the beef and vegetable mixture to an oven-safe casserole dish, ensuring it’s evenly spread.
  7. Now, spoon the prepared mashed potatoes evenly over the top, creating a smooth layer.
  8. To finish, sprinkle the shredded cheddar cheese generously over the mashed potatoes.
  9. Place the casserole dish under the broiler for just a few minutes until the cheese turns golden and bubbly.
