Upside-Down Shepherd’s Pie

For a quick and hearty meal, you might want to try the Upside-Down Shepherd’s Pie recipe. We’ve streamlined the process, placing the savory, veggie-filled beef mixture atop a bed of creamy mashed potatoes.

Ingredients:

For the beef mixture:

  • 1 tablespoon olive oil
  • 10 ounces 90% lean ground beef
  • 1 cup chopped onion
  • ½ cup chopped turnip (about 3 oz.)
  • ½ cup chopped carrot (approximately 1 medium carrot)
  • 2 teaspoons chopped fresh rosemary
  • 4 garlic cloves, minced
  • 2 cups unsalted beef stock
  • 2 tablespoons all-purpose flour
  • 1 cup frozen green peas
  • ½ teaspoon black pepper
  • ⅓ teaspoon kosher salt

For the mashed potatoes:

  • 3 cups frozen mashed potatoes (e.g., Ore-Ida Steam n’ Mash)
  • ⅓ cup 2% reduced-fat milk

 

 

Instructions:

Preparing the beef mixture:

  1. In a large nonstick skillet, heat the olive oil over medium-high heat. Add the ground beef and cook for 6 to 7 minutes, breaking it into crumbles as it browns.
  2. Incorporate the chopped onion, turnip, carrot, rosemary, and minced garlic. Sauté for an additional 6 minutes or until the vegetables are tender, giving them an occasional stir.
  3. Whisk together the unsalted beef stock and all-purpose flour. Pour this mixture into the skillet, bringing it to a boil. Reduce the heat to medium and let it simmer for 4 minutes or until it thickens.
  4. Add the frozen green peas, black pepper, and kosher salt to the skillet. Stir well.

Preparing the mashed potatoes:

  1. Place the frozen mashed potatoes in a microwave-safe dish, covering it with plastic wrap. Microwave the potatoes on HIGH for 6 minutes.
  2. Once done, add the reduced-fat milk to the potatoes and mash them to your desired consistency.

Assembling the dish:

  1. Divide the mashed potatoes evenly among four shallow bowls.
  2. Top the mashed potatoes with the beef mixture.
