Jerusalem Artichoke Coleslaw

This Jerusalem Artichoke Coleslaw offers a unique twist on the classic recipe. Creamy dressing pairs perfectly with the earthy flavor of Jerusalem artichokes, creating a refreshing side dish that’s anything but ordinary.

Ingredients:

  • 2 tablespoons sour cream
  • 2 tablespoons mayo
  • 1 teaspoon coarse mustard
  • 1 teaspoon capers, finely chopped
  • 2 teaspoons white wine vinegar
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound Jerusalem artichokes, thoroughly scrubbed
  • 1 large carrot, peeled
  • 6 tablespoons flat-leaf parsley, roughly chopped

 

 

Instructions:

  1. Prepare the Dressing: In a small bowl, whisk together the sour cream, mayo, coarse mustard, finely chopped capers, white wine vinegar, 3/4 teaspoon of salt, and 1/4 teaspoon of pepper. Ensure the dressing is well combined.
  2. Prep the Jerusalem Artichokes: Using a knife, peel the Jerusalem artichokes and immediately cut them into matchstick-sized pieces. Add these to the dressing as you go to prevent them from browning. Stir the artichokes to ensure they are evenly coated with the dressing.
  3. Matchstick Carrots: Cut the large carrot into matchstick-sized pieces of the same size as the artichokes. Add these carrot matchsticks to the dressing as well.
  4. Add Fresh Parsley: Toss in the roughly chopped flat-leaf parsley and mix everything thoroughly. The fresh parsley adds a burst of color and flavor.
  5. Chill and Serve: Allow the coleslaw to chill in the refrigerator for at least an hour before serving. This chilling time allows the flavors to meld, resulting in a deliciously refreshing coleslaw.
