Tangy Pickle Coleslaw Recipe

  • 1 cup matchstick carrots
  • ¾ cup mayonnaise
  • 1 tablespoon fresh lemon juice (from 1 lemon)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon granulated sugar
  • 2 tablespoons thinly sliced fresh chives
  • 2 teaspoons chopped fresh dill

 

 

Instructions:

  1. In a large mixing bowl, combine the finely shredded cabbage, thinly sliced dill pickle chips, and matchstick carrots.
  2. In a separate medium-sized bowl, whisk together the mayonnaise, 3 tablespoons of pickle juice, fresh lemon juice, kosher salt, black pepper, and granulated sugar until you have a creamy dressing.
  3. Pour the dressing over the cabbage, pickles, and carrots in the large bowl. Add the thinly sliced fresh chives and chopped fresh dill.
  4. Toss all the ingredients together thoroughly, ensuring that the coleslaw is evenly coated with the tangy dressing.
