Ingredients:
- 1/4 cup kosher salt
- 1/4 cup dark brown sugar (packed)
- 2 tablespoons smoked paprika
- 1 tablespoon dry mustard
- 1 tablespoon coarsely ground black pepper
- 2 teaspoons garlic powder
- 2 teaspoons ground cumin
- 1 1/2 teaspoons cayenne pepper
- 1 cup bottled apple juice
- 1 bone-in pork shoulder (5 to 6 pounds)
- Hardwood pellets for the grill
Instructions:
- Combine kosher salt, dark brown sugar, smoked paprika, dry mustard, black pepper, garlic powder, cumin, and cayenne pepper. Take 1/4 cup of this mix and blend it with bottled apple juice. Set it aside.
- Pat the pork shoulder dry and generously rub it with the remaining spice mixture.
- Preheat your pellet grill to 225°F according to the manufacturer’s instructions. Place the pork, fat side up, on the grill grates and start grilling. Remember to baste the pork with the apple juice mixture every hour. Grill until a meat thermometer reads 150°F to 155°F, which should take around 5 1/2 to 6 1/2 hours.
- Carefully remove the hot pork from the grill and wrap it in two layers of aluminum foil. Return it to the grill and continue cooking until the internal temperature reaches 200°F to 205°F, which should take about 2 1/2 to 3 1/2 hours.
- After grilling, let the pork rest in the foil for about 1 hour. Then, shred it using two forks, discarding any bones and excess fat. Combine the pulled pork with the reserved drippings for maximum flavor.
