Pulled Pork Stuffed Potato Skins

These Pulled Pork Stuffed Potato Skins are crispy, savory, and packed with flavor, making them the ideal treat for gatherings or a satisfying game day snack.

Ingredients:

  • ½ pound of leftover pulled pork.
  • 8 small Yukon Gold potatoes.
  • 1 tablespoon of extra-virgin olive oil.
  • ¼ teaspoon of kosher salt.
  • 2 tablespoons of melted grass-fed butter.
  • 1 cup of shredded cheddar cheese.
  • ¼ cup of BBQ sauce.
  • ½ cup of sour cream.
  • 3 green onions, chopped.

 

 

Instructions:

  1. Start by preheating your oven to 400°F and lining a baking tray with foil for easy cleanup.
  2. Take the small Yukon Gold potatoes, slice them lengthwise, and give them a good coating of extra-virgin olive oil. Arrange these potato halves flat-side down on your prepared baking tray.
  3. Bake them for approximately 25 minutes until they’re tender when pierced with a fork and their skins have crisped up just right. When done, take them out of the oven and let them cool a bit.
  4. Now, scoop out the insides of the potatoes, creating a little hollow for your delicious filling. Don’t waste those scooped-out potato bits; you can use them for another dish later.
  5. Increase your oven’s temperature to 475°F. Place those potato skins back onto the baking tray and pop them into the oven for about 10 more minutes until they’re wonderfully crispy.
  6. Once they’re done, take them out and stuff those crispy potato skins with your leftover pulled pork. Drizzle some mouthwatering BBQ sauce over them and sprinkle that heavenly shredded cheddar cheese.
  7. Put these loaded potato skins back into the oven for a quick minute or two, just until the cheese gets all gooey and irresistible.
  8. Finally, serve the stuffed pulled pork potato skins with a generous dollop of sour cream and a sprinkle of chopped green onions.
