Cheesy Turkey Enchiladas

When it comes to repurposing Thanksgiving and Christmas leftovers, these cheesy turkey enchiladas are a game-changer. This recipe combines the savory goodness of leftover turkey with the flavors of a classic enchilada. It’s a quick and simple way to enjoy a fantastic meal with minimal effort.

Ingredients:

  • 2 cups cooked and shredded leftover turkey (white or dark meat)
  • 1 can black beans, drained and rinsed
  • 2 cups Colby or Monterey Jack cheese
  • 12 flour tortillas
  • 2 cups store-bought enchilada sauce
  • 2 teaspoons ground cumin
  • Chopped cilantro for garnish

 

 

Instructions:

  1. Begin by preheating your oven to a toasty 375°F (190°C). Grease a casserole dish generously with grass-fed butter or cooking spray.
  2. Lay out the flour tortillas on a floured surface. In the center of each tortilla, create a line of shredded turkey and black beans. Sprinkle with shredded cheese and a dash of ground cumin.
  3. Carefully roll up each tortilla, securing the delicious filling inside.
  4. Pour one cup of enchilada sauce onto the bottom of your prepared casserole dish.
  5. Arrange the stuffed tortillas side by side in the dish.
  6. Top the enchiladas with the remaining enchilada sauce and an extra sprinkle of cheese.
  7. Bake in your preheated oven for about 15 minutes or until the cheese turns a delightful golden brown.
  8. Once out of the oven, sprinkle the enchiladas with freshly chopped cilantro for a burst of vibrant flavor.
