Feta-Stuffed Meatloaf with Roasted Peppers

This delightful dish combines juicy beef, savory feta, and aromatic herbs, creating a comforting and delicious experience. Paired with roasted peppers, it’s a straightforward recipe that turns a classic into a culinary delight.

Ingredients:

  • 80g of torn stale crusty bread
  • 2 tbsp of olive oil
  • 500g of high-quality beef mince
  • 70ml of whole milk
  • 1 beaten egg
  • A handful of thyme sprigs, leaves picked
  • 3 finely chopped onions
  • 2 finely chopped garlic cloves
  • 1 tbsp of German or Dijon mustard
  • ½ tbsp of finely chopped flat-leaf parsley
  • 200g of feta, drained and cut into cubes
  • 1 red pepper, sliced into strips
  • 1 yellow pepper, sliced into strips
  • 500ml of passata

 

Instructions:

  1. Preparation: Preheat the oven to 200C/180C fan/gas 6. Soak torn bread in a bowl with 150ml warm water for 10 mins. Grease a large casserole or baking dish using half the olive oil.
  2. Mix Meat: Remove excess water from soaked bread. In a large bowl, combine beef, milk, beaten egg, thyme leaves, half the chopped onions, and half the chopped garlic. Season with mustard, salt, and pepper. Mix well, then add finely chopped parsley and cubed feta, combining until just mixed.
  3. Shape and Roast: With damp hands, shape the beef mixture into a 25cm long oval. Brush with the remaining olive oil and place it in the prepared baking dish. Scatter sliced red and yellow peppers, as well as the remaining onions and garlic around it. Season and roast for 10 mins.
  4. Add Passata: Remove from the oven and pour passata around and over the vegetables. Continue roasting for another 25-30 mins until the meat is thoroughly cooked.
  5. Serve: Slice and serve with rice if desired.
