Sweet and Savory Meatloaf

Embrace the sweet side of meatloaf with this delightful Sweet and Savory Meatloaf recipe. Combining the richness of ground beef and the leanness of turkey, this dish offers a unique twist that’s sure to please your taste buds. Utilizing a food processor for efficiency, the meatloaf is infused with the sweet notes of peach chutney (or apricot jam), creating a perfect balance of flavors.

Ingredients:

  • 1 pound ground beef
  • 1/2 pound ground turkey
  • 2 slices of bread (processed into crumbs)
  • 1 onion, finely chopped
  • 2 carrots, finely chopped
  • 1 egg
  • 1/2 teaspoon curry powder (plus extra for seasoning)
  • Salt and pepper to taste
  • 1/2 cup peach chutney (or apricot jam)
  • 1/4 cup ketchup
  • Potatoes (for boiling)
  • Broccoli (for boiling)
  • Olive oil

 

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a food processor, process bread slices into crumbs. Finely chop onions and carrots using the same processor.
  3. In a large mixing bowl, combine ground beef, ground turkey, bread crumbs, chopped onions, chopped carrots, egg, and 1/2 teaspoon of curry powder.
  4. Season the mixture with salt and pepper to taste. Mix the ingredients by hand until fully integrated.
  5. Shape the mixture into a loaf and place it in a baking dish.
  6. In a small bowl, mix peach chutney (or apricot jam) with ketchup. Use this mixture to cover the meatloaf.
  7. Bake the meatloaf in the preheated oven for approximately 45-50 minutes or until cooked through.
  8. While the meatloaf is baking, boil potatoes and broccoli separately. Sprinkle them with curry powder and olive oil.
  9. Serve the sweet and savory meatloaf slices with the curry-seasoned boiled potatoes and broccoli on the side.
