Beef and Cheese Enchiladas

These enchiladas feature seasoned ground beef, a rich and savory sauce, and a generous amount of melted cheese. They’re wrapped in warm corn tortillas and baked to perfection.

Ingredients:

  • 8 (6-inch) corn tortillas
  • 1 ¼ pounds ground beef
  • 2 (16 oz.) jars enchilada sauce
  • 1 ¾ cups shredded Cheddar cheese
  • 1 ¾ cups shredded Monterey Jack cheese
  • 1 tablespoon olive oil
  • ½ cup chopped onion
  • 1 ¼ teaspoons chili powder
  • Kosher salt
  • Black pepper

 

 

Instructions:

  1. Warm the Tortillas: Begin by preheating your oven to 375°F (190°C). Wrap the corn tortillas in foil and place them in the preheated oven for about 10 minutes to warm them. This step makes the tortillas more pliable and easier to work with.
  2. Sauté Onions and Brown Beef: In a large saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook for approximately 4 minutes until it becomes soft and translucent. Then, increase the heat to medium-high, add the ground beef, and cook while stirring occasionally until it’s thoroughly browned, which should take about 5 minutes. Stir in 1.25 teaspoons of chili powder, and season the beef mixture with kosher salt and black pepper to your taste. Once cooked, transfer the beef to a colander to drain any excess fat.
  3. Assemble the Enchiladas: Take a 9-by-13-inch baking dish and pour one jar of enchilada sauce into it. To assemble the enchiladas, spoon roughly 1/3 cup of the cooked ground beef and 5 tablespoons of the mixed cheeses inside each of the warm tortillas. Roll up each tortilla in a cigar-like fashion, ensuring they are sealed, and place them in the baking dish seam side down, arranging them next to each other.
  4. Cover with Sauce and Cheese: Evenly pour the second jar of enchilada sauce over the top of the enchiladas and then sprinkle the remaining shredded Cheddar and Monterey Jack cheese on top.
  5. Bake to Perfection: Place the baking dish in the preheated oven at 375°F (190°C) and bake for approximately 15 minutes or until the enchiladas are bubbling, and the cheese is melted and slightly golden.
  6. Serve and Enjoy: Once done, remove the enchiladas from the oven and let them cool for a minute or two. Plate them up, garnish them with your favorite toppings if desired, and serve your delicious Beef and Cheese Enchiladas.
