Chorizo Baked Beans

Chorizo baked beans could be easily described as a classic. They are perfect as a side or a main course, offering a hearty and delicious option for your table.

 

 

Prep Time: 15 minutes (plus overnight soaking)

Cook Time: 3 hours (plus additional stovetop cooking)

Servings: 6-8

 

 

Ingredients:

  • 1 pound of pinto beans
  • 2 serrano chilies, diced
  • 1 chicken bouillon cube
  • 2 strips of bacon
  • Chorizo sausage, crumbled
  • 1 medium onion, chopped
  • 1 clove of garlic, minced
  • 1 small red pepper, diced
  • 1 tablespoon of tomato paste
  • 5 diced tomatoes
  • Salt and pepper to taste
  • Lime, cilantro, hot sauce (optional for serving)

 

 

Instructions:

  1. Begin by soaking the pinto beans overnight. Drain and rinse them thoroughly.
  2. In a large pot, add the soaked beans and cover them with six cups of water. Bring to a boil and then reduce the heat to a simmer. Cook the beans for about 3 hours or until they are tender. Stir in the chicken bouillon cube to infuse flavor.
  3. While the beans are simmering, in a skillet, sauté the chorizo and bacon over medium heat until the bacon becomes crisp and the sausage is cooked through.
  4. Add chopped onion to the skillet and cook until it becomes translucent. Stir in the minced garlic, serrano chilies, and diced red pepper. Cook for an additional 3 minutes.
  5. Incorporate the tomato paste and diced tomatoes into the skillet. Allow the mixture to simmer for about ten minutes, blending the flavors together.
  6. Add the skillet mixture to the simmering beans and continue to cook for an additional 20 minutes. Season with salt and pepper to taste.
  7. Serve the beans with optional toppings such as lime wedges, fresh cilantro, or hot sauce according to your preference.
