Ingredients:
- Sunflower oil (for greasing)
- 85g sage & onion stuffing mix
- 1 beef stock cube
- 8 rashers smoked streaky bacon
- 500g lean beef mince (less than 20% fat)
- Black pepper (to taste)
Instructions:
Step 1: Prepare the Stuffing Mix
- Preheat the oven to 180C/160C fan/gas 4. Grease the inside of a 900g loaf tin with sunflower oil.
- In a bowl, crumble the stock cube into the sage & onion stuffing mix.
- Pour 300ml boiling water over the stuffing mix, stirring well. Set aside.
Step 2: Line the Tin with Bacon
- Stretch the bacon rashers slightly by running the back of a spoon along their length.
- Use 6-7 bacon rashers to line the base and longest sides of the greased tin.
- Chop the remaining bacon rashers.
Step 3: Assemble and Bake
- Mix the chopped bacon and beef mince into the prepared stuffing mix. Add black pepper to taste.
- Press the mixture into the bacon-lined tin.
- Bake in the preheated oven for 40 minutes or until firm.
- Turn out the meatloaf and slice for serving.
