Easy Classic Shepherd’s Pie

Ingredients:

  • 1 lb ground turkey or beef
  • 1 finely chopped leek
  • 3 cloves minced garlic
  • 1 cup mixed frozen peas and corn, thawed
  • 8 oz sliced mushrooms
  • 1 can (10 oz) of cream of celery soup
  • 2 tsp soy sauce
  • ½ tsp dried thyme
  • Pinch of paprika
  • Salt and pepper to taste
  • 4 cups mashed sweet potatoes, prepared
  • 1 cup grated mozzarella cheese

 

 

Instructions:

  1. Start by preheating your oven to 375 degrees F (190 degrees C).
  2. In a large skillet, brown the ground turkey or beef over medium-high heat. Stir in the finely chopped leek and minced garlic. Cook until the meat is thoroughly cooked and the vegetables are tender. Drain any excess fat.
  3. Add the sliced mushrooms to the skillet and sauté them until they release their moisture and become tender. Season with salt and pepper.
  4. Stir in the cream of celery soup, soy sauce, dried thyme, and a pinch of paprika. Allow the mixture to simmer for a few minutes, creating a deliciously creamy filling.
  5. In a greased casserole dish, spread the meat and vegetable mixture evenly across the bottom.
  6. Layer the thawed mixed peas and corn on top of the meat mixture.
  7. Spoon the prepared mashed sweet potatoes over the vegetables, creating a smooth and even layer.
  8. Sprinkle the grated mozzarella cheese evenly over the top.
  9. Place the casserole in the preheated oven and bake for approximately 25-30 minutes, until the pie is bubbling and the cheese has melted, forming a golden crust.
  10. Remove the Shepherd’s Pie from the oven and allow it to rest for a few minutes before serving.
