Hearty Beef and Veggie Shepherd’s Pie

Ingredients:

  • 1 lb ground beef
  • 1/2 cup finely chopped onion
  • 1 garlic clove, minced
  • 3/4 cup tomato paste
  • 1/4 cup Worcestershire sauce
  • 1 1/2 cups beef broth
  • 4 cups frozen mixed vegetables
  • 1 lb white or russet potatoes, peeled and chunked
  • 1/4 cup Greek yogurt
  • 1/4 cup milk
  • 1 teaspoon kosher salt
  • 1 cup shredded cheddar cheese, divided

 

Instructions:

  1. Start by preheating your oven to 350 degrees F. Then, generously coat a 1.5-quart baking dish with cooking spray.
  2. Peel the potatoes and cut them into chunks. Place these potato chunks in a pot of cold water. Bring the water to a boil and cook the potatoes until they are tender.
  3. While the potatoes are simmering away, it’s time to cook the beef mixture. In a skillet, combine the ground beef, minced garlic, chopped onion, and a pinch of salt and pepper. Cook this mixture until the beef is nicely browned. Once done, drain any excess grease and return it to the skillet.
  4. Add the tomato paste, Worcestershire sauce, and beef broth to the skillet. Give everything a good stir to create a flavorful sauce.
  5. Now, introduce the frozen mixed vegetables to the skillet. Let everything simmer for about ten to fifteen minutes, allowing the flavors to meld together. Feel free to season with salt and pepper to taste.
  6. Once your potatoes are tender, drain them and place them back in the pot. Now, add in half of the shredded cheddar cheese, Greek yogurt, milk, and salt. Begin mashing until you’ve achieved creamy mashed potatoes.
  7. Transfer the beef mixture to your prepared casserole dish, spreading it out evenly. Next, layer on the creamy mashed potatoes, ensuring an even distribution. Finish it off by sprinkling the remaining cheddar cheese on top.
  8. Slide your casserole dish into the preheated oven. Allow it to bake for about 30 to 35 minutes or until those mashed potatoes acquire a beautiful golden-brown finish.
