Low-Fat Turkey and Swiss Cheese Meatloaf

Contrary to the notion that low-fat recipes are bland, this meatloaf brings together lean turkey, milk, breadcrumbs, Swiss cheese, and an egg white for a satisfying and figure-friendly meal.

Ingredients:

  • 1 pound low-fat ground turkey
  • 1/2 cup skim milk
  • 1/2 cup breadcrumbs
  • 1/2 cup shredded Swiss cheese
  • 1 egg white
  • 2 tablespoons cooking oil
  • 1 onion, finely chopped
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • Salt to taste
  • Optional: Zucchini (for added freshness)

 

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, heat cooking oil over medium heat. Add onions, mushrooms, and garlic with a pinch of salt. Cook for about five minutes until softened. If using zucchini, add it to the mix but be mindful of the longer cooking time.
  3. In a large mixing bowl, combine low-fat ground turkey, skim milk, breadcrumbs, Swiss cheese, and the egg white.
  4. Add the sautéed mixture from the saucepan to the bowl. Season with catsup and mustard, adjusting to your taste preferences.
  5. Mix all the ingredients thoroughly until well combined.
  6. Transfer the mixture into a greased loaf pan, shaping it into a loaf.
  7. Bake in the preheated oven for approximately 40-45 minutes or until the internal temperature reaches 165°F (74°C).
  8. Allow the meatloaf to sit for a few minutes before slicing and serving.
