Mini BBQ Pulled Pork Sliders with Pickles

Perfect for casual get-togethers, these mini sandwiches combine tender BBQ pulled pork, zesty pickles, and creamy coleslaw.

Servings: 6 sliders

 

 

Ingredients:

  • 1 pound of BBQ Pulled Pork
  • ½ teaspoon of brown sugar
  • 1 teaspoon of apple cider vinegar
  • 1 teaspoon of yellow mustard
  • 24 dill pickle slices
  • 1 green onion, thinly sliced
  • 1 cup of coleslaw
  • 6 potato rolls or fresh whole-grain rolls

 

 

Instructions: 

  1. Prep the Pork:
    • Preheat your oven to 300°F (150°C) and line a baking tray with foil.
    • Season the pork with your choice of spices and place it on the prepared tray.
    • Roast the pork in the oven for about 3 hours or until it’s tender and easily shreddable.
    • Remove the pork from the oven and use two forks to shred it finely.
  2. Toss the Pork:
    • In a mixing bowl, combine the shredded pork with your favorite BBQ sauce, brown sugar, yellow mustard, apple cider vinegar, and sliced green onions.
    • Toss everything together to ensure the pork is evenly coated with these flavorful ingredients.
  3. Prepare the Coleslaw:
    • In a separate bowl, prepare the coleslaw according to your preferred recipe.
  4. Assemble the Sliders:
    • Lay out a platter or serving tray and arrange the dill pickle slices on it.
    • Place the pulled pork on top of the pickle slices, creating a flavorful base for your sliders.
    • Add a generous helping of coleslaw on top of the pulled pork.
  5. Serve and Enjoy:
    • Serve these mini-BBQ sliders warm with potato or whole-grain rolls on the side.
