Pan-Seared Scallops with Brussels Sprouts and Lemon-Chive Crème Fraîche

This dish combines the richness of perfectly cooked scallops with the crispiness of pancetta and the freshness of Brussels sprouts, creating a delightful symphony of flavors.

Ingredients:

  • 1/4 cup crème fraîche
  • 1/4 teaspoon finely grated lemon zest
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon snipped chives
  • 3 tablespoons extra-virgin olive oil
  • Salt and freshly ground pepper
  • 6 jumbo scallops (about 3/4 pound)
  • 6 thin slices pancetta (about 2 ounces)
  • 1/2 pound Brussels sprouts, thinly sliced
  • 1 shallot, thinly sliced
  • 1 tablespoon unsalted butter
  • 1 garlic clove, minced

 

Instructions:

  1. Combine crème fraîche, lemon zest, lemon juice, chives, and 1 tablespoon of olive oil in a small bowl, whisking until well-blended. Season the mixture with a pinch of salt and pepper.
  2. In a skillet, heat the remaining 2 tablespoons of olive oil until it shimmers. Season the scallops with a touch of salt and pepper, then sear them in the skillet over moderate heat until they achieve a golden hue and are perfectly cooked through approximately 5 minutes. Once done, transfer the scallops to a plate and loosely cover them with foil.
  3. In a separate skillet, cook the pancetta over high heat until it turns brown and attains a crispy texture, which usually takes about 4 minutes. Introduce the Brussels sprouts and shallots to the skillet, stirring the ingredients until the sprouts soften while retaining their vibrant green color, typically around 2 minutes. Remove the skillet from heat, add the butter and garlic, and season with salt and pepper.
  4. To serve, arrange the Brussels sprouts mixture on a plate, top it with the seared scallops, and garnish with a dollop of the lemon-chive crème fraîche. This delectable dish is now ready to be enjoyed.
