Pulled Pork Tacos with Creamy Avocado Sauce

Ingredients

  • 2 pounds boneless pork shoulder, trimmed.
  • 1 cup chicken stock.
  • 8 corn tortillas.
  • 1/4 cup BBQ sauce.
  • 1/4 cup brown sugar.
  • 1 tablespoon ground cumin.
  • 2 cloves minced garlic.
  • 2 onions, quartered.
  • 1/2 cup sour cream.
  • 1 avocado, smashed.
  • 1/2 cup shredded red cabbage.
  • 1 cup pineapple salsa.
  • 5 limes.
  • 1/2 cup chopped cilantro.
  • 1/2 teaspoon kosher salt.
  • Freshly cracked black pepper.

 

Instructions:

  1. Begin by creating a flavorful rub for the pork. In a medium mixing bowl, combine the salt, pepper, brown sugar, and ground cumin. Ensure the pork shoulder is well-coated with this delicious rub.
  2. Place the seasoned pork shoulder into your trusty slow cooker. Add the chicken stock, freshly squeezed lime juice, minced garlic, quartered onions, and enough purified water to submerge the pork. Set the slow cooker to low and allow it to work its magic for 8 hours, rendering the pork tender and bursting with flavor.
  3. While the pork is in the slow cooker, whip up the avocado crema. Using a food processor, blend the sour cream and smashed avocado until you achieve a velvety-smooth consistency.
