  • 1 teaspoon ground cumin
  • 1 can (14.5 oz) diced tomatoes (undrained)
  • 2 lbs pulled pork
  • 3 cups chicken stock
  • 1 teaspoon hot sauce
  • 1 can (16 oz) baked beans, drained
  • 1 cup sour cream
  • 3 tablespoons fresh cilantro, chopped
  • 1 cup cheddar cheese, shredded

 

 

Instructions:

  1. In a large saucepan, heat olive oil over medium-high heat.
  2. Add finely chopped onions, minced garlic, diced green bell peppers, chili powder, and ground cumin. Sauté this flavorful mixture for about 5 minutes, stirring frequently.
  3. Introduce the pulled pork and diced tomatoes to the pot. Add hot sauce and pour in the chicken stock.
  4. Incorporate the drained baked beans and bring the mixture to a boil. Then, reduce the heat and let it simmer for 20 minutes.
  5. Serve these delectable pulled pork baked beans while they’re piping hot. Top them with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped cilantro for an irresistible finish.
