Ingredients:
- 500g ground turkey
- 1 egg, beaten
- 1 cup breadcrumbs (divided)
- 1 tablespoon sunflower oil
- 2 leeks, sliced
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 100g bacon, chopped
- Boiled potatoes and carrots (for serving)

Instructions:
- Preheat the oven to 220C. Heat the sunflower oil in a frying pan and sauté the leeks for 5 minutes until softened. Line the base of a 28 x 18cm baking tin with greaseproof paper.
- In a mixing bowl, combine the turkey mince, thyme, two-thirds of the breadcrumbs, sautéed leeks, and beaten egg. Season with a little salt and pepper. Transfer the mixture into the prepared tin, pressing it firmly and ruffling the surface with a fork.
- In a separate bowl, mix the remaining breadcrumbs with chopped bacon and scatter the mixture over the top. Bake for 15 minutes, then finish under the grill until golden and crisp on top.
- Serve the turkey, thyme, and leek meatloaf with boiled potatoes and carrots for a wholesome meal.
