Zesty Asparagus and Lemon Risotto

Ingredients:

  • ¾ cup finely chopped onion
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup Arborio rice
  • 3 cups unsalted chicken stock
  • ⅓ cup dry white wine
  • 1 pound fresh asparagus, trimmed and cut into 1/2-inch pieces
  • ½ teaspoon grated lemon zest
  • 1 ½ tablespoons fresh lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 ½ ounces shaved Parmigiano-Reggiano cheese (1/3 cup), divided

 

Instructions:

  1. In a microwave-safe glass bowl, combine chopped onion, butter, olive oil, and minced garlic. Microwave on HIGH for 3 minutes.
  2. Stir in Arborio rice, ensuring it’s coated in the flavorful mix; microwave for an additional 3 minutes.
  3. Introduce chicken stock and white wine to the bowl, continuing to microwave on HIGH for 16 minutes. Stir briefly every 4 minutes.
  4. Add the fresh asparagus to the risotto and microwave on HIGH for an additional 2 minutes.
  5. Stir in grated lemon zest, fresh lemon juice, salt, pepper, and half of the Parmigiano-Reggiano cheese.
  6. Top the risotto with the remaining cheese and relish the burst of flavors.
